Fresh Stuffed Bell Peppers

"I kind of copied this from a coworker, who I saw eating basically a sandwich, but instead of bread she used a red bell pepper. I was so inspired I came up with this very basic recipe. Feel free to add any ingredients you can think of. I just used what I had in my fridge, but would have loved to add cucumber, sweet onion, or a different color bell pepper (I used green). Also, any vinagrette dressing would probably be delicious. This makes a great lunch, especially if you have a fridge at work. Just prep everything in the morning and stuff the peppers at lunch time."

  • Shred the thin sliced deli turkey, cube the mushrooms, cube the tomato, and crumble the feta cheese all into a mixing bowl.
  • Add the dressing and toss all together. Set aside in fridge.
  • Slice the bell peppers in half and hollow out the seeds.
  • Stuff the bell pepper halves with the mixture. Serve cold.
