  • 4 -6 peaches, pitted and cut into bite-size pieces
  • 1 tablespoon honey
  • 4 -6 basil leaves, thinly sliced
  • 12 cup lemon goat cheese (or plain chevre with a little lemon zest)
  • 1 pinch salt

directions

  • Place the peaches in a bowl and coat with honey. Sprinkle with salt. Then gently fold in basil and chevre.

  2. This is a great combination. I used fresh-picked SC peaches. I loved the basil and the lemony goat cheese. My only issue was the honey. It made the basil and goat cheese clump up together and the salad had a too-sticky-sweet texture. I would make this again, but next time I will sprinkle with raw sugar instead of honey and keep the rest of the ingredients the same. Thanx for sharing!
