    Ingredients:

    Directions:

    1. 1
      Cream butter or margarine and sugar in a bowl.
    2. 2
      Add egg and beat until light and fluffy.
    3. 3
      In another bowl mix flour, baking soda and seasonings.
    4. 4
      Stir flour mixture into egg mixture, a little at a time.
    5. 5
      Peel, pit and finely dice peaches, stir into cookie mixture.
    6. 6
      Stir in raisins.
    7. 7
      Drop dough by rounded teaspoonfuls onto cookie sheet.
    8. 8
      Bake at 375°F for 20 minutes until cookies are brown on top.

      Cool thoroughly.

      Perfect little dessert for a summer bbq! Easy to put together and taste like a little bite of peach cobbler. Skipped the raisins, also subbed some ginger for the cinnamon (someone has an allergy, I would have loved the cinnamon). Will make again.

      In response to Auntkeds - 3 medium peaches is approximately 2 to 2 1/4 cups peeled and chopped fresh peaches.
      I'm making these for our open house (we are selling our house) from the peaches off of our peach tree in the back yard. I did add vanilla and left out the raisins (didn't have any on hand). This is exactly what I was looking for in a peach cookie!

      Very Tasty made during the 9:00 PM and 9:30 Firework Shows in My Windows View. Tonight is July 4th. I wanted a Plain Peach Cookie as I had 6 Lb's of Fresh Peachs to use up, I did not use the Raisins or the Spice. I did increase to 4 Large Peach's and heavy drizzle of a Simple White Icing. 1/2 Cup of Confectionery Sugar and add 1 Tablespoon of Whole Milk at a time until desired degree of icing. They are beautiful and will be a treat at Work tomorrow.
