- 8 ounces uncooked fettuccine
- 3 cups sliced fresh mushrooms
- 1⁄4 cup chopped fresh parsley
- 1⁄4 cup red wine vinegar
- 1⁄4 cup olive oil
- 3 tablespoons grated parmesan cheese
- 2 teaspoons chopped fresh rosemary
- 1⁄2 teaspoon pepper
- 1 -2 garlic clove, crushed
- Bring a large pot of water to a boil; add salt and cook fettuccine al dente per package directions; drain; rinse with cold water; drain again.
- Toss fettuccine and remaining ingredients.
