Fresh Mozzarella & Tomato Salad With Balsamic Vinaigrette
"A great summer recipe when the tomatoes are plentiful. Great served with a steak or Italian Food or just some cold-cuts, cheese and crackers on the side. You can also add sliced Black Olives or Kalmata Olives if you like,"

ingredients
- 8 ounces fresh mozzarella balls, sliced
- 3 cups fresh baby greens
- 3 tomatoes, sliced
- 2 tablespoons fresh basil, chpped

Dressing
- 1⁄4 cup olive oil
- 3 tablespoons balsamic vinegar
- 1⁄2 teaspoon Dijon mustard
- 1⁄4 teaspoon salt (or to taste)
- fresh ground pepper
directions
- Mix Vinegar, mustard, salt and pepper together.
- Add oil and whisk until well blended.
- Spread greens on plate or in bowl.
- Cover with tomato slices.
- Arrange Cheese slices on top of tomatoes.
- Drizzle dressing over salad.
- Sprinkle with fresh basil.

I liked this salad very much. I julienned the basil, but I think in future I would prefer larger pieces, so maybe a rough chop or use small leaves. I added a touch of honey to the dressing because of personal preference. Thanks for posting! Great idea! -

So good!! I used grape tomatoes and sliced my mozzarella into thin rounds and tore into about 3 pieces just to make them around the same size as the tomatoes. Very good, ate every bit :) -
I was disappointed in this recipe - the dressing was boring. I should have thought to reduce the balsamic vinegar to make it a little more interesting. -
Wow! 10 stars from us! We loved this salad and the dressing is to die for....if you like caprese salad you will love this one...I will be making this a ton I bet.

I decided to re-do my "about me" page. The
first one has been up since I joined in 2005. The other page was kind of long and strung out, so I decided to condense. I am originally from New Orleans and have also lived in Florida for many years. We recently moved back to the panhandle of FL after living for many years in Jacksonville. It is great to be back over here where the pace is slower and the people are nicer! I come from a long line of good cooks, and learned a lot from them, and I love to cook. Although I am not much of a baker, other than a decent pound cake or key lime pie. We like spicy food, but not so hot that you can't taste what the dish is really about.
At this moment I am not working, but I am the caregiver for my elderly Mom. It has been nice to have the time to really cook and enjoy it, not just be trying to get something on the table. I have had time to garden and other things I just didn't really have time for when I worked. I may never go back to work :)
I enjoy going to antique stores, thrift stores, estate sales and auctions. I collect a lot of different things so I am always looking for that "special" thing.
I love all animals and I feed the birds, squirels, bunnies and just about anything else that comes along.
I have 3 dogs, all rescues, and one big black cat who wandered up and decided he liked living with us and stayed Editing to add that I am down to 2 dogs now, sadly my Boomer left for the Rainbow Bridge on 6/22/09. RIP old friend I will always miss you.
