Thank you for sharing this lovely recipe Evelyn. I enjoyed this refreshing lemonade treat. It was tart tangy, spicy and slightly sweet. I really like lemon, honey, ginger and mint so this seemed tailor made for me. I used spearmint in the lemonade it worked great. Made for Culinary Quest - 2014 - Suitcase Gourmets.
I reduced the ginger substantially to about 2 1/2 tablespoons. Fresh mint from our garden! The mixture was strained twice to remove any residual ginger peel. Perfect beverage for a 95º+ summer day. Thanks, Ev'! Prepared for CQ 2014.
Very good lemonade! This recipe combined 3 ingredients I love: honey, mint and ginger.<br/>This is a summer hit, but I'm sure it will be delicious hot (reheating it!) in winter too.

I really liked this! I'm glad I didn't overdo the lemon juice, because the ginger gave a strong flavor that I liked a lot. Summer ginger ades and ales are just fine with me! I have plenty of garden mint, and it tasted great with this thirst quencher! Ginger is very, very good for your health! I may try to simmer the ginger first, cool it, then add the honey and mint next time!
Maybe not enough mint. Maybe too much honey. It was ok, but imo a lot of trouble to go through.

I keep making this and making this! In Iowa's hot weather, this is good with and without the "tipple". I have a couple of different kinds of mint growing in the garden, and am looking forward to planting some other options (pineapple mint!) and making it some more. Not too sweet, and a change from tea, lemonade, soda, etc. I loved it.
Very good and refreshing. Next time I will add a little more lemon juice. Loved the mint/ginger combination. The honey gave it just the right amount of sweetness.
