      I'm always looking for new salad recipes and this one is fantastic! The dressing was a perfect compliment to the fresh veggies and the feta added the saltiness I needed. I'd seen cans of hearts of palm at Trader Joe's but hadn't ever tried them. LOVE them!!! (They remind me of the meat from artichoke hearts. Yummy!) Thanks for posting a wonderful recipe, Engrossed!

      This is definitely a different yet delicious way to fix green beans. I've never eaten green beans without cooking them first, but I enjoyed the crunch they had to them. I really liked them with green beans and the hearts of palm (something I never tried before, either). The dressing went perfectly with it and I LOVED the feta cheese on top. Excellent side dish with my favorite vegetable!

      I thought this salad looked great, except that I wasn't sure about the raw green beans (I checked with Engrossed that they're supposed to be uncooked and she said yes). I use regular, not marinated, hearts of palm and did put the optional Splenda to taste but not the optional feta to the dressing. I made a half-recipe of the salad, but the whole dressing recipe and will save the rest to use on other salad. Well, let me tell you, this was a success. Using thin green beans, I found them to taste great dressed like this and they add a nice crunch. I will definitely make this again, especially when I want to impress somebody with something a little different.
