I made this up from some notes I had
- sugar cookie
- lemon curd
- fresh fruit
- Top the sugar cookies with lemon curd and arrange fresh fruit on top.
- Could be done with puff pastry, small cooked pie crusts or anything else your imagination can conjure.
- Found the Cooking Light recipe and it was a big 12" sugar cookie. It had raspberry jam under the lemon curd with raspberries, blackberries, strawberries and plum. It was then broiled for 3 minutes.
