  • In a pan saute onions in oil till a caramel color, set aside to cool completely.
  • Preheat oven to 450 degrees.
  • Roll out dough on a floured surface to 1 inch thick. You can make it round or square all a matter of taste.
  • Place on a pan that is dusted with corn meal.
  • Spread a thin coat of olive oil on dough.
  • Arrange goat cheese, figs cut side up, cooled onions around on crust.
  • Top with mozzarella cheese and sprinkle with rosemary.
  • Place in oven and bake for 15-20 minutes.
  • ALTERNATE method:

  • If grilling preheat grill to medium high.
  • Oil one side and place on a clean oiled grill and grill for 4-5 minutes.
  • Flip and then lightly spread olive oil on dough.
  • Arrange goat cheese, figs cut side up, cooled onions around on crust.
  • Top with mozzarella cheese and sprinkle with rosemary.
  • Cook a couple more minutes.

  1. Delicious and simple. I had figs from our produce delivery and I'm normally not a huge fan, but this was so good. I used a boboli thin crust, and I did have the cranberry goat cheese. I thought it might be too sweet but the rosemary and the onions balanced it. So yummy!
     
  2. Yummy! My three year old enjoyed the flavors and the proscuitto. My husband ate over half the pizza. *whispering* It was so good I burned my mouth on a fig from just out of the oven. Being greedy, yet satisfied. I added proscuitto and dried cranberries as mentioned by others in reviews. I will be making this again. Thanks for the recipe!

  4. We really enjoyed this! To lighten it up a bit, I used portabello mushrooms as little crusts--the rest was as the recipe indicated. Since I couldn't find cranberry goat cheese, I soaked several dried cranberries in water, then minced them. Delicious@
     
  5. Like other reviewers - figs are in season and we needed to use some up. My daughter and I made this as an appetizer. Since it was a last minute decision, we grabbed some Trader Joe's pizza dough, switched out the goat cheese for Gorgonzola, and used fresh mozzarella. Oh, we're not fans of rosemary, so we switched it out for Italian seasoning that we sprinkled on top. It was definitely restaurant quality! Soooo delicious!

  1. Delicious pizza, tossed the figs in some honey before placing them on pizza and added chopped fresh spinach, once pizza was fully cooked added basil and balsamic reduction sauce.

  2. This was good, but was not as tasty as I was hoping. I think I will try it one more time during fig season but tweak the recipe a bit. It seemed that everything was on the sweet side (maui onions, handcrafted soft goat milk cheese, super ripe figs) and therefore it didn't have a depth of flavor. Maybe if I'd had the cranberries, or maybe some balsamic? Perhaps some feta instead of the goat cheese which is wonderful, but not salty. Not sure. It might have been my particular ingredients which were perhaps not the quite same as what everyone else has been using.
     
  3. Very nice Pizza, can also be made in small pieces or cut into small pieces and used as an appetizer. Here are the changes I made: for the dough, used a whole-wheat recipe and parbaked the dough for 8 minutes after rolling. I omitted the drizzling of olive oil on the dough to keep lower in fat. I used dried figs instead of the fresh, and sliced each fig into 4 rounds. I also used swiss cheese instead of the mozzarella. All in all good recipe, will increase the figs and the onions next time.
