Fresh Corn With Lime and Cilantro

  • Microwave method for cooking corn: husk corn and wash off any loose silk. Place wet corn into Ziploc bag. Place bag in microwave and cook 4 minutes; rotate ears and cook 2 more minutes. Let sit 2 minutes to finish cooking. Cool five minutes and then slice kernels off the cob.
  • Combine corn kernels, lime juice, lime zest, butter, salt and pepper. **Can be made ahead up to this point.
  • Just before serving, add cilantro and toss to combine. If desired, garnish with lime slices and sprig of cilantro.

  4. Very good and fresh tasting! This was so simple and went very well with a southwest marinated and grilled chicken breast - made for some good eating! I didn't use this method to cook my corn but wrapped each ear in plastic wrap and nuked them approximately the same amount of time. This is how I usually cook corn on the cob. Worked just fine but nice to know an even easier way! I really appreciate a new way to use the rest of a bunch of cilantro that just seems to go to waste in the crisper. Delicious recipe.
     
  5. I was a tad nervous about the cooking method but trusted that you wouldn't steer me wrong. The baggie got limp but it didn't melt as I was afraid it would. Perfectly steamed corn - no muss, no fuss. We often squeeze limes over corn on the cob but the added cilantro flavor took this over the top! This will now be the only way I serve corn, be it fresh, canned or frozen. Thanks so much for sharing !
