Fresh Corn, Tomato and Green Bean Salad

- 3 ear corn, grilled or microwaved,cooled
- 453.59 g fresh green beans
- 2 473.19 ml cherry tomatoes or 473.19 ml red pear tomatoes, halved
- 59.14 59.14 ml green onions or 59.14 ml shallot (optional)
- 59.14 ml flat-leaf Italian parsley, chopped
- assorted fresh herb (such as oregano, rosemary, sage, thyme, mint, etc. to taste)

Dressing
- 29.58 ml honey
- 4.92 ml salt
- 4.92 ml fresh ground black pepper
- 2.46 ml freshly ground coriander
- 2.46 ml minced garlic (optional)
- 1 lime, juice of
- 14.79 ml seasoned rice vinegar
- 59.14 ml oil
directions
- Break the green beans into 2 inch pieces and blanch briefly in boiling water or microwave for 2-3 minutes until bright green and slightly tender.
- Immediately run under icy cold water to stop cooking and cool.
- Transfer beans to salad bowl and add chopped tomatoes.
- Slice kernals off corn cobs and add to salad bowl, along with chopped herbs.
- Make Dressing: Combine all ingredients except oil in a small mixing bowl and whisk to blend.
- Slowly whisk in oil in a steady stream until well blended.
- Pour dressing over salad and toss gently so as not to break up too many of the chunks of corn.
- Serve immediately or refrigerate a few hours until ready to serve.
- Salad is still good after a day or two, but the color of the beans will fade.
- Bring almost to room temperature before serving.
- NOTE:You may have to adjust the dressing to your taste.
- I continued to play with it after I dressed the salad.

In my family, I am most famous (infamous) for several dishes:
My first original recipe: Conceived around age 7, for a cheese sandwich. Toasted English muffin, spread with butter, slice of American cheese, a good layer of Parmesan, top with other half of buttered muffin.
My most disasterous recipe: The Exploding Brownies. Otherwise great hershey's recipe for brownies involving an ingredient (baking powder) that I'd never used before. I somehow misread 1/4 teaspoon as a 1/4 cup. Brownie coated the ENTIRE oven.
My most requested recipe: Stollen at Christmas. I am required to make one for my mother ever since my sister gave me Christian Teubner's wonderful Christmas Baking book full of traditional German Christmas treats.
