Delicious. Followed the recipe and made this for Mother's Day brunch. Added a side of fresh fruit with yogurt. The ingredients balanced very nicely such that nothing overpowered anything else. We all agreed we will be asking dad to make this again.
Great basic recipe. I made several modifications.<br/>I didn't have fresh cilantro, so I used fresh basil. I used fresh potatoes, sauteed with onions first. I brushed the crust with parmesan cheese before browning. I left out the meat & sauteed red & green peppers & more onions with a dash of cumin. I used 8 eggs. I topped with shredded Mexican cheese & jarred salsa. Baking time for me was less than 15 minutes. About 5-7 to cook. About 8 with pan on broil to brown the top.
