Very quick and nutritious salad, taken from TOH magazine.
- 3⁄4 lb chopped fresh broccoli
- 1 small green apple, chopped
- 1⁄2 cup chopped red onion
- 3 tablespoons bacon bits
- 1⁄2 cup ranch dressing
- 4 1⁄2 teaspoons sugar
- In a large bowl, combine the broccoli, apple, onion and bacon.
- In a small bowl, combine salad dressing and sugar.
- Pour over broccoli mixture, toss to coat.
This was very good - nice and crunchy with a tasty dressing. I made the mistake of using cooking onions, which I would not recommend - way to strong. Next time I will use red or reduce the onion by half if I must use cooking onions. Nice healthy easy recipe - and the apples make it light and refreshing. I tied it with baked potatoes and it was delicious as well. I used low-fat ranch dressing and fake dry bacon bits and theyseemed to work really well. Thank you for posting this recipe!
