  • Preheat oven to 350°; grease and flour a 10-inch tube pan.
  • In a bowl, combine the oil and sugar.
  • Beat in the eggs, one at a time, mixing well after each addition; stir in vanilla.
  • In another bowl, combine the flour, cinnamon, salt, and baking soda.
  • Stir the flour mixture into the egg mixture.
  • Fold in the apples and nuts; pour the batter into the prepared pan.
  • Bake for 1 1/2 hours, or until a pick comes out clean.
  • Let cake cool in pan for 10 minutes before transferring it to a serving plate.
  • May drizzle the warm cake with caramel sauce before serving.
