This is even better if you use more than one variety of apple! Also great served warm with a caramel sauce and/or ice cream.

I really liked the flavor of the cinnamon and apples, and it was especially good warm out of the oven. If I had the ice cream and caramel sauce I would have been in big trouble :). I only used about 1/2 cup of chopped nuts, just because of personal preference. I did spray the baking pan with cooking spray before pouring in batter and I think I would skip that next time. The day after the bottom of the cake was really moist. I did only have to bake for about 45 to 50 minutes before a tester came out clean, maybe if I had also let it go the entire hour I wouldn't have the bottom issue. Nevertheless, I've been snacking on it almost every time I walk by.

  1. Heat oven to 350°F.
  2. Mix apples and sugar thoroughly.
  3. Add oil, nuts, eggs, and vanilla.
  4. Mix dry ingredients together and then with apple mixture.
  5. Bake 9 by 13 at 350°F for 45 minutes to 1 hour.
