This is a take-off from the signature salad at a local euro grill. Other favorite salad ingredients can be added as wished and use your favorite dressing. Quantities are approximate for two dinner sized salad servings These are just the key ingredients that make the salad so yummy and filling.

  1. We also like avacado, bell peppers, cucumber etc,. Make sure to add your favorite dressing and toss thoroughly.

I loved this combination of colorful ingredients together. For the lettuce, I used torn romaine leaves. I made a simple dijon viniagrette for the dressing. I think any viniagrette would go well for this. Thanx for sharing this yummy salad!

Loved this salad because I LUV beets! Any way, any time! I, too, had a pink salad as I used the pickled beet juice as a base for a simple dressing. Thnx for posting your recipe, LizzieLou. Made for PAC Spring 2010. You've been adopted!

I thought this was good. I do however recommend not adding the beets until ready to serve. Even though I had drained them and blotted dry with paper towels my salad was pink lol. I added hard boiled egg and cucumbers and tossed in balsamic vinaigrette. It was a nice change for lunch. *Made for PAC Spring 2010*
