"Someone bought me a Ben & Jerry's Homemade Ice Cream & Dessert Book (title). This book is great it tells how to make most of their flavors and some. The book can be ordered at the bookstore for about $8.95. The reason I like this ice cream is because you can freeze it and it is like the store bought hard ice cream. I do not eat it right from the freezer because to me it is to creamy. French Vanilla"

  • Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes.
  • Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream, milk, and vanilla and whisk to blend.
  • Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.
  • Makes 1 Quart **Variation: add 1 cup coarsely chopped Reese's Peanut butter cups, after ice cream stiffens (about 2 minutes before it is done) let it continue processing.

  1. I noticed a lot of people were concerned about using raw eggs. The technique of slowly adding sugar to the beaten eggs kills the bacteria causing enzymes, "cooking" them and making them safe for consumption. I used my hand mixer instead of a whisk and it turned out great! Very easy and loved not having to stand by the stove in this heat! Next time I will use vanilla sugar to give more vanilla punch!
     
  2. WOW ... super easy to make and great taste. Wanted coconut so instead of 2TSP of vanilla, I used 1TSP coconut extract and 1TSP of vanilla. Wonder for Root Beer floats!
     
  3. This makes the most delicious ice cream! It takes a little muscle to whisk the eggs enough, but it's well worth it. Make sure you get the eggs really frothy and thick; that is KEY. I'd trade a tired-out whisking arm for this ice cream any day.
     
  4. Mine came out good, very creamy, consistency and texture like that of store bought premium. I took advice of another post and blended with electric mixer, but slowly adding ingredients as suggested in recipe, making sure to get a fluffy mix.
     
  5. This is amazing, delicious, and easy! I used the double boiler method (cooking the milk & sugar til slightly thickened, then slowly whisking in the eggs and cooking for a while to get the eggs cooked) before I added the cream. I also used vanilla bean paste for that authentic look and the best taste possible. LOVE this one, thanks so much for sharing!

  1. We really enjoyed this. I did heat this over a double boiler until thickened, as I was nervous about serving raw eggs to my son. I also used a vanilla bean instead of extract. It was OUTSTANDING!

  4. Absolutely amazing. I am cutting out all processed sugar so I replaced the 3/4 cup of sugar for a 1/3 cup of honey and it was amazing. Perfection in a spoon
     
  5. I made this to go along with a Strawberry birthday cake I made. I made as the directions read, only used real vanilla instead of the imitation. Makes a big difference in the flavor of other things, so thought it would be great with this recipe and it worked great. The kids came back for 2nds and 3rds, so I guess it was good!
