Because I have IBS, I can't digest certain types of food. So I substituted Silk brand unsweetened soy milk and Eggbeaters for the milk and eggs. It was just me this morning, so I halved the recipe, but used 3 slices of bread instead of 4. I heated the honey and soy milk on low and added it to the Eggbeaters and cinnamon. I flipped the bread slics over in the mixture 4 times then browned both sides on an electric skillet at 350 degrees F. I agree with the other reviewer. No syrup needed! The honey comes through nicely. I used only a bit of Smart Balance spread. Thanks, WJKing, for a nice variation on french toast! :)

  1. Combine honey& milk in saucepan, and stir over low heat until well blended.
  2. In separate bowl, beat eggs& cinnamon.
  3. Add honey mixture.
  4. Briefly soak thick slices of bread in mixture.
  5. Brown on both sides over low heat, on greased griddle, until golden brown.
