I won't rate this since I deviated a fair bit, choosing to use a whole fish and putting all ingredients in together and just roasting for 30 minutes. Turns out I don't really like big chunks of fennel and tomatoes, only little chunks. My DH thought this was wonderful though, so I assure readers, this was just personal taste only. This is a 5 star keeper. I made this for a romantic dinner with my Valentine. I used cherry tomatoes as they are more flavourful in the middle of winter than larger ones. This recipe is easy, delicious and elegant. I would recommend this as a dinner party main. Thanks so much French Tart.
Delicious combination. Fresh and unique. I did not have white wine on hand so used a ginger infused green tea with some chicken stock concentrate added to it. Instead of fennel I used Lavender. It was wonderful! I had never used fennel and it was delicious, but a little hard. Maybe I had to cook it longer? The tomatoes were perfect and even a little overcooked. But we loved it and will make it again for friends!

I was looking for a perch recipe & ran into this recipe . It was the 1st time hubby & I bought perch. This was absolutely divine. I also added baby spinach. It is now our favorite. And we looooove seafood. Thanks for posting!
Excellent!! I used Tilapia and would recommend it. Great flavors and easy to expand and hold for large parties.
Delicious! And healthy too! I used halibut, and the flavor the aromatic roasted vegetables imparted to it was fabulous. I forgot to add the wine when I added the fish, so I missed out on that layer of flavor, but since I know I'll be making this again I'll get to sample that tasty sauce another reviewer mentioned. Served this with a side of brussels sprouts and it was a perfect meal.
I made this with snapper and served with plenty of crusty bread and a little ratatouille. Delicious! The fish was beautifully cooked, very moist and tender. I used baby fennel, which I won't do again since turns out to be tougher than regular size fennel. Other than that, a perfect meal.
Another great recipe from French Tart! We loved the licorice flavour of the fennel with the fish and tomatoes. I used John Dory fillets, and they absorbed all the flavours very well. This is a healthy and tasty way to prepare fish. Thanks!
