I made macaroons last week and was quite disappointed with them. THIS recipe is quite different to the on in my cookbook and worked REALLY well for me. I found the finished macaroons looked much nicer and the texture was way better too. I'll be using this recipe now and ringing in the chages with different fillings from my. book. The pink colouring "slipped" so they are quite bright, but I think very pretty! I found the lid of my salt grinder was just over 4cm, so used it to mark circles on my baking paper and I didn't worry that my piping nozzle was just under 1.5cm.
