A friend made this for us & it was delicious. She shared the recipe with me so I'm passing on to other Zaar members. For variation, you can add mushrooms, peppers, chopped olives or other vegetables, as desired, along with the garlic & onion. Cooking time is based on using a french loaf vs. individual rolls.

Directions

  1. Preheat oven to 300°F
  2. In skillet, over medium heat, brown sausages. Remove with slotted spoon, set aside & keep warm; drain excess fat.
  3. Sauté garlic & onion 2 – 3 mins, until soft.
  4. Add tomatoes, tomato paste, basil, oregano & pepper. Simmer for 15 mins, stirring occasionally.
  5. Slice off the top of the loaf of bread (or rolls) lengthwise. Scoop out the centre of the loaf leaving a 1” shell.
  6. Spread ½ of the tomato mixture into the hollowed loaf. Layer the sausage over the tomatoes. Top with remaining tomato mixture. Sprinkle the mozza & cheddar cheese on top & replace the top of the loaf.
  7. Double wrap loaf in heavy aluminum foil & place on a cookie sheet.
  8. Bake for 1 ½ hrs (or 1 hr for dinner rolls).
  9. Remove from oven & let set for 20 minutes.
  10. To serve, cut loaf into 2” slices.
