In France, the arrival of the first tiny sweet peas (petits pois) is cause for celebration. However, one 10oz package of frozen green peas (thawed) can be substituted for the fresh peas.
- 1 1⁄2 cups green peas (11/2 lbs in pods)
- 1 cup shredded lettuce
- 2 tablespoons water
- 2 tablespoons butter
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon sugar
- 3 medium green onions, sliced
- 1 dash pepper
- Heat all ingredients to boiling; reduce heat.
- Cover and cook about 8 minutes or until peas are tender.
Yum! These were great. I must admit that I messed up the recipe - but it still came out great. I was also making Potatoes a L'alsacienne and mistakenly grabbed the herbs for it (tarragon, chives, thyme, and parsley) and added them to the peas. LOL. Sorry about that!
