French Dips with Mushrooms

"I found this recipe in the "Better homes and gardens" Crockpot cookbook. Something different to make in the crockpot and very good with just a salad."

  • Trim fat from roast.
  • If necessary, cut roast to fit into a 3 1/2 to 6 quart crockpot.
  • In a large skillet brown meat on all sides in hot oil.
  • drain off fat.
  • Transfer meat to crockpot.
  • Clean mushrooms; remove and discard stems.
  • Cut mushrooms into 1/4 inch slices.
  • Add to crockpot.
  • Pour broth over meat and mushrooms.
  • Cover and cook on low-heat setting for 8 to 9 hours or on high heat setting for 4 to 4 1/2 hours.
  • Remove meat from crockpot; cover and let stand for 10 minutes.
  • Meanwhile, using a slotted spoon, remove mushrooms and set aside.
  • Thinly slice meat.
  • Arrange meat, mushroom slices, and onion slices on toasted buns.
  • Pour cooking juices into a measuring cup; skim off fat.
  • Drizzle a little of the juices onto each sandwich and pour the remaining juices into bowls to serve with the sandwiches for dipping.

  1. This recipe was so simple and so good. I put in an additional can of beef broth because I have 5 people, but I do not think it was really needed. All the kids were ready to run when they saw it cooking, but it was really quiet when they started eating, and it was all gone ; ) Thank you!!!
     
  2. My husband was so happy I made this! I did make a few changes out of necessity! I used chicken broth instead of beef, left out the onion(my husband doesn't like onion) and served it over whole wheat bread. Thanks for a recipe I will use again!

My updated profile...it has been almost five years since I did my last profile so I thought it was high time for me to update it. I have been living in Florida since I was two years and am almost 53 now so you can do the math. I have been happily married to my sweetie Petey for almost 23 years. We have two kids, son P.Samuel, age 17 and daughter Leah, age 6 as of Sept. 1, 2010. I had some health issues over the last few years that I won't bore anyone with. I had to have three VERY unpleasant surgeries. During that Time I taught my son Sam how to cook whilst I was in and out of hospitals. If I must say, he is very good, I told him whenever he has a serious girlfriend, she will love his culinary skills. Daughter Leah is a great help also. I am very lucky to have two wonderful kids. Sam is a senior in H.S. and Leah just started first grade. Yep, she is my menopausal surprise, but the best surprise ever. Oh, and Leah, who is standing right here did not want me to forget to mention our ten year old calico cat named Callie. She is sweet but cranky. I love to cook all kinds of main dishes, love finding new recipes from recipezaar/food.com all the time. We recently got something called a nuwave oven, it is the greatest invention since sliced bread. I have been a member of recipezaar since my son was small and I love it. That's it for now.
