This is a great ,fast,lowfat elegant treat. I suppose,if you leave nuts out,you can use remaining condensed milk to keep fat content out.Not sure if it would hold together as well though.But that is entirly up to you! Found this in a old cookbook 8)
- 3⁄4 cup cocoa
- 1 3⁄4 cups confectioners' sugar
- 1 cup chopped nuts
- 1⁄2 cup fat-free sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 pinch salt
- Combine 1/2 cup cocoa with 1 1/2 cups sugar.
- Add in the nuts,combine.
- Moisten the mixture with the condensed milk,sat& vanilla extract.
- Shape into balls.
- Combine the remaining cocoa and sugar.
- Roll balls through it.
While searching for a quick, easy recipe with ingredients I had on hand for an upcoming group meeting (I always try out new recipes on unsuspecting groups of people, for some reason!), I came across this recipe.
It was very easy and very delicious. The only change I made was adding a tablespoon or so of cinnamon to the rolling mixture, it just added a little something that I liked better. I actually got two batches out of a 14 oz can of sweetened condensed milk. The first batch I rolled smaller and got about 38-40 balls. The second ended up larger and I only got 26. I also had quite a lot of the rolling mixture left over, enough for at least one more batch, probably two.
I only had raw, shelled peanuts on hand, so I "chopped" them in the blender (ended up very fine) and roasted them a bit before adding to the mixture. I was also very liberal with the homemade vanilla I used.
I will definitely make these again. I saw another recipe that was kind of similar and they recommended freezing for a chewy texture. I imagine that these could be made ahead, for the holidays for example, and frozen. I plan on trying that out! Thanks for posting this little gem, it made my preparations for the group much easier.
