I used 6 medium potatoes for 4 of us as a side dish and we thoroughly enjoyed, I did not do as an OAMC but did prepare the potatoes earlier in the day and reheated for dinner later. I can really see the versatility in this recipe in that you can have it as a side or light meal with salad especially if you think a little ahead and defrost during the day and then a quick reheat while you cook your meat or prepare a salad. These were very good. I made 1/4 of the recipe for a grandkids sleepover during ZWT6 and they gobbled them up, although I had to leave the onion out of theirs. Thank you for this great recipe.

Wonderful twice baked taters!! I didn't have the thin skinned on hand so used 2 very large Idaho potatoes and then adjusted the other ingredients down for 2 lbs. This made me 4 large potatoes, of which 3 are gone and one is in the freezer. Thanks for sharing the recipe. Made for PRMR.

Easy peasy! I won't be buying stuffed baked potatoes any more, now that I know how easy it is to do it myself. I halved the recipe as I was making it for a single friend, and left the bacon at 4 strips. He loves them! (I also baked the potatoes in the oven as I was roasting veggies for stock at the same time, but other than browning the outside of the potoes a little, I don't expect that had much effect on the outcome.) Great. I followed the recipe as written other then I used regular onions instead of green onions as that is all I had. We had them for dinner and then I froze the rest. Looking forward to having them again.

I made these as directed with the bacon and a Mexican cheese blend. Very yummy! I had one for dinner and froze the rest for other meals. Thanks gailanng for another keeper. Made for Potluck Tag.

We had these with our steak dinner last night. I made four potatoes resulting in 8 halves and cut the amounts of the filling ingredients down accordingly. We ate one each with dinner and the rest are in my freezer for a busy night! Thanks for posting! Made for Holiday Tag November 2009!

This was an excellent way to made freezable Twice Baked Potatoes, although I didn't freeze all of them. I plan to take some for lunches as these will warm up well in the microwave. I estimated at the ingredients, eyeballing most for what we like and getting the consistency to where we like it. The flavors blended so well together. I'll make these again. But I think I like the thicker potato skins of the baked potatoe. (I love potato skins) Thanks for sharing gailanng Made for Pot Luck Tag :)

I have always wanted to make twice baked potatoes for the freezer and this is a good and relatively easy recipe. I was given 2 bags of regular Idaho potatoes so I used them instead of buying thin-skinned potatoes. Other than that I followed the recipe except made part of the potatoes w/o green onions because of DD dislike of onions. I will definitely make these again. Great OAMC food. Made for PAC Fall 2009.
