I created this out of necessity - I wanted to make minestroni soup, but I didn't have most of the ingredients, & I had a bunch of stuff that needed to be used up, so I threw it all in a pot & came up with a soup actually worth writing down. This can easily be doubled & it freezes beautifully
- Slice sausages into bite sized pieces & fry in bottom of pot
- Add broth, corn, carrots, & celery. Simmer 10 minutes
- Add all other ingredients & cook for 20 minutes.
