- 8 ounces frozen puff pastry
- 3 tablespoons apricot jam
- 4 ounces butter or 4 ounces margarine, softened
- 4 ounces caster sugar
- 2 eggs
- 4 ounces ground almonds
- 3 drops almond extract
directions
- Roll out pastry and line flan 8" dish.
- spread jam over pastry.
- cream butter and sugar.
- add eggs a little at a time.
- beat in almonds and extract.
- spread mixture over jam
- roll out remaining pastry into strips and place over mixture.
- bake 40-45 min at 190 degrees (375 farenheit).

I love trying all different types of cuisines. my favorites right now are indian, mexican, and japanese :) I'm currently a student so I try to find recipes that I can tweak in order to make smaller portions. I don't like eating the same thing more than once a week and I hate wasting food so this becomes a very creative process ( and not enough freezer space!)
