  • Saute garlic in oil until barely brown, and add zucchini.
  • Stir to cover zucchini with oil and garlic.
  • Add rosemary, salt, and pepper.
  • Simmer gently, adding wine as necessary to maintain moistness, until zucchini is barely tender, about 6 minutes.

  4. I infused the oil with the garlic and rosemary first. Then I pulled the garlic & rosemary off into a bowl so it would not burn. After cooking the zucchini I added the garlic & rosemary back to the pan. I love the aroma of the wine as you poured it into the hot skillet. I think I'll add 2 sprigs of rosemary next time.   5. I made this yesterday for a hot dinner date as a side dish for Recipe #129410 and wild rice. I used fresh rosemary. It came out delicious, and I thought the rosemary really complemented the wild rice well, so that combination is a keeper! Thanks for a great recipe!
