My mother-in-law gave me this recipe. They do crumble a little bit when right out of the oven, but they are just so easy to make-- I always have the ingredients on hand.
- 1 cup peanut butter
- 1 egg
- 3⁄4 cup sugar (Splenda may be substituted)
- 1 teaspoon vanilla
- 1⁄2 cup chocolate chips (optional) or 1⁄2 cup butterscotch chips (optional)
- Preheat oven to 350.
- Mix peanut butter, egg, sugar, and vanilla in a large bowl with a hand mixer until well combined. Stir in chocolate chips or butterscotch chips.
- Spoon tablespoon-sized balls of dough onto an ungreased cookie sheet. Do not flatten cookies. Bake for 10 minutes at 350. Transfer to cooling rack.
