ingredients
- 1⁄4 1/4 cup butter or 1/4 cup olive oil
- 1⁄2 cup Xylitol sweetener or 1/2 cup other 1-1 artificial sweetener
- 1⁄4 cup molasses
- 2 large eggs
- 1 ripe banana, mashed
- 1 cup whole milk
- 1 cup wheat bran
- 1⁄8 cup ground flax seeds
- 1⁄2 cup rolled oats
- 2⁄3 cup all-purpose flour
- 1⁄3 cup vanilla-flavoured whey powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon xanthan gum (optional)
- 1 cup raisins
directions
- Cream shortening, sugar or Xylitol, molasses.
- Add eggs, beat until well blended.
- Add milk and ripe banana. Mix until well blended.
- In separate bowl, whisk all dry ingredients except raisins until blended. Add raisins to dry ingredients, mixing to coat raisins and separating any that are stuck together.
- Add dry ingredients to wet ingredients and mix gently just until all dry ingredients are moistened. (Over-mixing will make them tough.).
- Distribute evenly into 12 large greased muffin cups. If lining with paper, use X-lge and spray with Pam as the protein powder makes them stick.
- bake at 325 degrees for 25-30 minutes. Cool on rack.
