  • Cream shortening, sugar or Xylitol, molasses.
  • Add eggs, beat until well blended.
  • Add milk and ripe banana. Mix until well blended.
  • In separate bowl, whisk all dry ingredients except raisins until blended. Add raisins to dry ingredients, mixing to coat raisins and separating any that are stuck together.
  • Add dry ingredients to wet ingredients and mix gently just until all dry ingredients are moistened. (Over-mixing will make them tough.).
  • Distribute evenly into 12 large greased muffin cups. If lining with paper, use X-lge and spray with Pam as the protein powder makes them stick.
  • bake at 325 degrees for 25-30 minutes. Cool on rack.
