Update: I made a double batch of this bread recently, and want to add to my comments. I did follow the recipe as to amounts of vegetables. I used red onion, red bell pepper and carrot this time. As I now have a food processor, I used it to grate the vegetables, even adding part of the water to make sure they would be grated fine. I made the bread, itself, by hand. It is outstanding. The picture doesn't show it well enough, and of course, can't show how it smells or tastes. The basil and thyme combined with the vegetables make for a truly delicious bread, which I highly recommend. In my previous review, of April 22, 2004, I stated that I used green onion, red bell pepper and carrot. I used more vegetables than the recipe calls for, so increased the amounts of flour and salt, and got delicious bread. This is a very flexible and enjoyable recipe.
