Fondue of the Apocalypse

ingredients
- 1⁄2 lb smoked gruyere cheese
- 1⁄2 lb emmenthaler cheese
- 1 cup dry white wine
- 1 ounce dried mushroom
- 1 1⁄2 cups water
- 1 tablespoon dried garlic
- 1⁄2 teaspoon paprika
- 2 tablespoons flour
- 1 dash cracked black pepper
- 1 teaspoon lemon thyme
directions
- shred cheeses and mix with flour, paprika, and garlic until lightly coated and set aside. soak mushrooms in water for 1 hour. drain well, reserving the water, and finely chop mushrooms and set aside. mix mushroom water and wine and simmer on low heat on the stove. slowly add shredded cheese while stirring constantly to incorporate. once all cheese is mixed in, add thyme and cracked black pepper. transfer to fondue pot and serve with crusty french bread, veggie sticks, or small smoked sausages.
