Very nice and easy. I used raw honey instead of sugar because believe it or not I used up the last of my sugar in the cake. If you are just frosting one cake halving this recipe is going to be plenty. That is what I did and it was more than enough. I even used it for piping and it worked well. Thanks!
I had just baked up a fresh batch of vanilla sugar cookies today that I had planned to frost with a vanilla buttercream, until I opened my cabinet and realized I had only about a half cup of powdered sugar left. I didn't want to run out to the store so I decided to search for a frosting recipe that doesn't require powdered sugar...but this was not an easy task! Almost every frosting/icing recipe I found needed cup after cup of powdered sugar...then I stumbled upon this recipe. I had all the ingredients so I figured I would give it a shot. First of all, this was super easy! I added a few drops of red food coloring when I added the vanilla to make pink frosting for Valentine's Day. I was a little nervous about putting this on cookies as it is not very thick at all, but I was pleasantly surprised with it. I actually love the lightness of it. Not to mention this is a far healthier alternative to a shortening/butter loaded frosting. It tastes delicious, and I don't think anyone will miss the fat :-) I can't wait to try this on a cake! Used this frosting on a dark chocolate cake. I added peppermint extract to the frosting and it complemented the chocolate very well. frosting was not as sweet as I was hoping for though. Adding more sugar would not have been the answer though. I think next time I will instead add a cup of marshmallow cream. Hopefully this will not only sweeten the frosting, but also help firm it up a bit.
This is one of my favorite frostings. I've used it for years, and it has never failed me. It's very similar to the 7-Minute Frosting but much easier to make. As stated it's fantastic with chocolate cake.
Tasted great, just didn't get to the stiffness I was hoping, it was a bit runny. I'll try this one again for sure to see if I can make it work though! Thanks for posting it!
Excellent "snow" icing for a Christmas birthday cake. A perfect alternative to overly sweet, transfat-full icing in a can!
This frosting was so easy to make. I think next time I will beat the egg whites first, as has been suggested here. The only change I made was I added some crushed pineapple and coconut extract. It was yummy!
We loved the taste of this frosting! It is reminiscent of marshmallow creme. I followed directions exactly, but couldn't get it to thicken quite all the way to stiff peaks. Next time I'll try beating the egg whites first, then adding the syrup as others have mentioned. We ate it on chocolate cake (#113914) for a birthday.

This is a classic Italian meringue icing, one of my absolute favorites. Ms_meg - I'm guessing you didn't pour the hot sugar syrup in slowly enough or your mixer was on too high a speed - those are the only times this recipe has failed for me. Try again with your mixer on medium, this recipe really is worth it!
