A very light and easy way to make a quick frosting for cakes or cupcakes. Very creamy and delicious.

  1. Combine all ingredients in a deep narrow bottom mixing bowl.
  2. Beat slowly with electric mixer until blended, then beat at high speed until frosting forms soft peaks (4-6 minutes).
  3. Spread on cake.

Delicious, light and not too sweet. To me this is the perfect frosting! I especially like that you can use whatever flavor of pudding you want to complement your cake (or cupcake!) flavor. Thanks for posting such an excellent, easy and great tasting recipe!

This is an excellent frosting recipe. I used my Kitchenaid mixer bowl; started at Stir to combine ingredients, and then beat at High speed #6 for about 4 to 6 minutes. This frosting freezes well too. You can make your cake ahead and freeze it. Thaw cake in refrigerator and keep leftovers in refrigerator too. A lemon pudding mix is great for a vanilla or lemon cake; sprinkle top of frosting with grated lemon rind.
