Fluffster's Sweet Potatoes Anna

"This is another variation of Potatoes Anna, which is made with white potatoes.These are tender and flavorful and a wonderful recipe that you can use as a side dish for many meals. They go great with ham, of course, but are delicious with steak, pork chops, even fish! So try something new for a change!   • Preheat oven to 425°F.
  • Coat bottom of shallow 1 1/2 quart round baking dish or 9-inch pie plate with 1 tablespoons butter.
  • Thinly slice sweet potatoes. Overlap slices in a single layer in bottom of a prepared dish. Sprinkle 1 tablespoons cheese on top. Drizzle 1 tablespoons butter over top. Season with salt and pepper to taste. Repeat layering until all ingredients have been used, shaking dish occasionally to prevent sticking. Drizzle any remaining butter over top.
  • Cover pan with foil. Press down to compact the sweet potatoes. Place heavy skillet on top of foil. Bake on lowest oven rack for 30 minutes. Remove skillet and foil. Bake for 45 minutes, or until browned and crisp on top and edges. Let stand for 5 minutes.
  • Holding sweet potatoes in dish with a large spatula, drain off any excess butter. Loosen potatoes around edges with a small spatula. Invert onto a serving plate.

I have seen some very famous entertainers, including Liza Minnelli, Penn and Teller, Ray Liotta, Dr. J (Julius Erving), Frank Sinatra and his wife Barbara Marx. and many, many more. Cooking is my passion, and I am slowly, but surely beginning to venture into the world of baking. To me, cooking is so much easier because baking is so much more exact. I love to make Italian and Mexican food the best, followed by Chinese and last, but by far the least, good old American food! How can you beat chicken fried steak, mashed potatoes and gravy?? I love to find several recipes and put my own spin on them and create a new recipe.
