Flourless Peanut Butter, Pumpkin Butter Pancakes

I came up with these pancakes for my son who can't eat Gluten and Casein. They are very thin and light with just the right amount of sweetness.

THANK YOU! My nutritionist just took me off of all grains, especially at breakfast time. I love eggs, but honestly couldn't stand the thought of eating them AGAIN this morning. And I love Pancakes even more than eggs! I think this recipe will be my morning savior! (My only concern is where to buy pumpkin butter when I finish the jar my mother in law just gave me that she got at a gourmet gift shop....) Neither the pumpkin nor the peanut butter were over powering. While my husband wasn't terribly impressed, my daughter and I loved them. And I look forward to making them often in the future. I want to try them with apple butter also.

  1. In a medium bowl mix all ingredients together and pour onto a hot griddle. This will make a thin pancake be careful not to burn.
