Added small amt of chopped dried apricots and chopped pistachio, as well as 1/2 tsp vanilla.

taking on 'road trip' this Sat- healthy munchies! and sooo easy to make!
The batter seemed a little dry, so I added a half cup of no-sugar-added applesauce (instead of oil). I also added cinnamon, vanilla, walnuts, dried cherries (soaked in boiling water to remove excess sugar), and 3 tbs of agave nectar. I put a few dark chocolate chips on the top of some cookies, just because I love dark chocolate so much! I love that this recipe can be modified in so many ways to make a healthier, chewy-granola type treat! I'll be taking a couple of these on my next gym trip!
