- 453.59 g hot Italian chicken sausage, removed from casings
- 113.39 g mozzarella cheese, shredded
- 113.39 g sharp cheddar cheese, shredded
- 113.39 g monterey jack cheese, shredded
- 113.39 g grated parmesan cheese
- 118.29 ml finely chopped onion
- 118.29 ml finely chopped sweet red pepper
- 2.46 ml garlic powder
- 4.92 ml dried basil
- 4.92 ml dried oregano
- 4.92 ml dried rosemary
- 1.23 ml fresh ground black pepper
- 10 large eggs, well beaten
- sea salt (to taste)
directions
- Preheat oven to 375 degrees.
- Lightly brown sausage in a pan, breaking apart into small pieces. Drain on paper towels to remove excess grease.
- Place sausage in a 13 x 9 inch baking dish.
- To the beaten eggs, add the dry ingredients, mixing well.
- Add cheeses to the egg mixture, stirring to combine.
- Pour (or spoon) egg mixture over sausage to cover.
- Bake for 18-22 minutes. Edges of casserole may brown slightly when done.
- Cool for 5-10 minutes before cutting.
- Cut into 12 - 16 squares, depending on serving size desired.
- TO REHEAT: Microwave for about 1 minute each to reheat when quiche squares have been refrigerated.

This was both easy and delicious, and it does lend itself to many different variations. I used regular bulk pork sausage but found I didn't have enough, so I added some bacon that I nuked in the microwave. Other than that, I followed the recipe exactly as posted. I also reheated some squares the next day, and they came out perfectly. This is definitely a great idea for a take-along breakfast as well as sitting down with it fresh from the oven. Thanks for sharing! Made for ZWT7.
