• 29.58 ml honey
• 532.32 ml warm water
• 59.14 ml applesauce
• 4.92 ml pure vanilla extract
• 2 large eggs
• 946.36 ml whole wheat flour
• 4.92 ml salt
• 14.79 ml baking powder
• 14.79 ml ground cinnamon
• 2.46 ml cayenne pepper
• 236.59 ml pecans, chopped
• 118.29 ml craisins

directions

1. Preheat the oven to 400°F
2. Line regular or mini-muffin cups with paper liners.
3. In the bowl of an electric mixer, combine the honey, water,applesauce, vanilla, and eggs and mix until foamy.
4. Add the flour, salt, baking powder, cinnamon, and pepper; mix until smooth.
5. Fold in the pecans and craisins (dried cranberries).
6. Place a heaping tablespoon of the batter in each regular muffin tin, OR a heaping teaspoon in each mini-muffin tin.
7. Bake until golden brown, about 15 minutes for regular and 10 minutes for minis.
8. Cool on a rack and store in an airtight tin.
