Flax Oatmeal Chocolate Chip Cookies

"A recipe I found on www.Hy-Vee.com I wanted to make oatmeal cookies with flax meal. You can grind your own flax meal or find it already grounded (such as Bob's Red Mill brand). I use a cookie-dough scooper (like an ice-cream scooper but alot smaller) instead of rolling the dough into 1" balls, alot faster and easier."

  • *Either use purchased milled flaxseed (flax meal), or grind whole flaxseed in a coffee grinder to a granular, free-flowing meal. You can purchase this at healthfood stores or healthfood sections at some grocery stores.
  • Cream margarine (or butter), white sugar and brown sugar until light and fluffy.
  • Add eggs and vanilla and beat well.
  • In a separate bowl, mix together flour, oats, milled flaxseed, salt, baking powder and baking soda. Stir into creamed mixture.
  • Add nuts and chocolate chips, mix until blended.
  • Form dough into 1-inch balls. Place balls on an ungreased cookie sheet, leaving 2 inches between cookies.
  • Bake at 350 degrees for about 10 - 12 minutes.

  1. Follows recipe exactly, other than I substituted in chopped walnuts instead of the almonds or pecans. Dough was easy to mix surprisingly. And they taste so delish. Will make again and again.

  2. Followed recipe exactly as is, just didn't have nuts. So I did 2 cups of chocolate chips - 1 cup white chocolate, 1 cut dark chocolate. Turned out perfect! I just had to leave them longer in the oven. I don't know if that's just my oven. Total 15-17 minutes.
     
  3. Yum! I'm a fan. These came out with a very nice crisp on the outside, still perfectly gooey on the inside. Things I'll change next time: add 3/4 tsp cinnamon and go just shy of tripling the salt. Best thing dessert can be is salty.

  5. I just finished making these cookies and they are delicious. I am not a baker and I always try baking healthier which usually ruins the baking. I used half a cup of spelt flour and used sunflower seeds instead of nuts To keep a protein in the cookie ( nut allergy in my house) and they turned out great. Also only had quick oats. And they still turned out great. Next time will try making them with chia seed instead of butter ... If you don't roll into 1 inch balls I could see them ending like pancakes so beware if you don't.

Tweaks

  1. I doubled the vanilla and salt (just habit) and substituted flax egg for real eggs because why not, already went to the trouble of grinding up the seeds. Added a couple spoonfuls of collagen powder, too. Never hurts.

  3. Great cookies. I used whole wheat flour in place of the all-purpose flour. They didn't last long at all.

I'm married with 2 young children. Like lots of other folks, after getting married, I finally started learning how to cook when we got tired of take-out food. Watching Foodnetwork taught me lots of skills as well as inspired me to try. I haven't followed the shows much nowadays, but years ago my favorite chefs on FoodNetwork were Giada DeLaurentis, Ina Garten, Bobby Flay, Alton Brown, and Paula Deen.
