ingredients
- 1⁄4 cup ground flax seeds
- 1⁄2 teaspoon baking powder
- 1⁄2 packet Smucker's No Sugar Added Orange Spread, splenda
- 1⁄4 cup egg white
- 1 teaspoon butter
- 1 tablespoon whey protein powder
directions
- Mix it all together until thoroughly blended. Spread evenly. (I mix and cook in the same grab-it bowl) Nuke for 50 seconds.

This was OK, but a little bland and overly filling. I think I would only make half of this next time. A whole one was just a little too much. And it needed a little more flavor. Maybe I would use a berry jam next time? I didn't have any packets of jam so I just used a tablespoon of some apple preserves I had. This is a healthier alternative to regular muffins and I thank you for the recipe.
