five stars because these really get the job done! my husband requested flax muffins, and i was happy to find these because they are pure flax, no additional flours. however, after trying one, i realized they were too potent for him! no problem i ate the whole batch myself. delicious and easy. i used a cup of pureed firm tofu for the egg replacer, and i used a combination of maple syrup and honey for the sweetener. also added about 1/2 cup sliced almonds. will definitely make these again, with variations. thanks zevy for a wonderful recipe!


  1. Spray 12 muffin cups with Pam.
  2. Bake @ 350 for ~40 minutes.
  3. 90 cals/muffin.
