Flax Bread Without Yeast, Gluten, Sugar or Dairy

"I have arrived at this recipe after starting with a flax muffin recipe for people on a candida diet and adapting it to suit my husband's desire to have bread without yeast, gluten, sugar or dairy. This makes a little loaf that rises a bit and can be cut into slices. It would be a tiny sandwich, but it makes nice bits of toast. He enjoys it with butter and sugar-free jam."

  • Preheat oven to 180°C or 350°F Grease a small loaf pan (about 4" x 7" or 10cm x 18cm).
  • Mix together the flax meal, buckwheat flour, rice flour, baking powder, baking soda and xanthan gum. The xanthan gum gives it a bit better texture, but could be eliminated.
  • In a separate bowl, beat the eggs and add the oil, soy milk and lemon juice.
  • Once the oven is to temperature, mix the wet and dry ingredients together, put in the pan, smoothing the top with a spatula. (The lemon juice acts with the baking powder, and it's best to mix it, then go right into the oven.).
  • Bake for 35-40 minutes.

  1. My husband is on the candida diet so I'm interested in this kind of thing. My poor husband hasn't been able to eat bread for months now. I just made this and even I (not on a candida diet) like it alot! He isn't home yet but I know he'll love it.
     
  2. Made for All New Zaar Cookbooks tag. This did not work for me at all and I could not eat it. Don't know if I did something wrong or not, but it was not edible.
