  1. For a crispier crust, cover flatbread doughs in olive oil and bake at 425 for 5-10 minutes.
  2. Thinly slice tomatoes, and then cut in half.
  3. Arrange tomatoes on dough so that there is a little bit of room (i.e. They are not overlapping, just barely touching).
  4. Over top of the tomatoes, place mozzarella the same way (Not overlapping, just barely touching).
  5. Add basil (as much as you want).
  6. Cook for 10 - 15 minutes or until cheese melts and crust seems cooked enough.
  7. Season with salt and pepper.
  8. Repeat steps 2-8 again, but add pepperoni when you add the basil.
  9. *Optional* Drizzle with balsamic.
  10. Cut vertically, and then cut 6 times horizontally so there are 12 equally sized pieces.
  11. Serve warm.
