Flatbread Pizza

- 2 pizza dough (flatbread)
- 2 heirloom tomatoes
- 1 lb of fresh mozzarella cheese
- 2 tablespoons olive oil
- pepperoni
- basil
- salt
- pepper
- optional* balsamic vinegar
directions
- For a crispier crust, cover flatbread doughs in olive oil and bake at 425 for 5-10 minutes.
- Thinly slice tomatoes, and then cut in half.
- Arrange tomatoes on dough so that there is a little bit of room (i.e. They are not overlapping, just barely touching).
- Over top of the tomatoes, place mozzarella the same way (Not overlapping, just barely touching).
- Add basil (as much as you want).
- Cook for 10 - 15 minutes or until cheese melts and crust seems cooked enough.
- Season with salt and pepper.
- Repeat steps 2-8 again, but add pepperoni when you add the basil.
- *Optional* Drizzle with balsamic.
- Cut vertically, and then cut 6 times horizontally so there are 12 equally sized pieces.
- Serve warm.
