Flat Bread Chicken Quesadilla

Low fat, low calorie but yummy! These chicken quesadillas are such a nice change from the same "healthy diet" food and they taste like a splurge! Easy too!

Ingredients Nutrition

  • 4 slices flat bread (I use FlatOut brand)
  • 2 chicken breasts, chopped into small pieces
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 onion, chopped
  • 2 tablespoons fajita seasoning mix
  • 2 cups low-fat cheese, shredded

Directions

  1. Saute chicken in a little olive oil until no longer pink inside.
  2. Add peppers, onion and fajita seasoning to chicken and saute until veggies are tender.
  3. Spray both sides of flatbread with cooking spray.
  4. On one rounded half of the flatbread, spread the quesadilla mixture.
  5. Fold over.
  6. Cook each side for 2-3 minutes in a saute pan.
  7. Remove from pan and serve with sour cream, salsa or ranch dressing.
