Flash Chicken

"I suppose this is very similar to Chicken parmigiana, but I have renamed it because it was so quick, easy, and delicious. I added a handful of black olives which gave it a nice twist."

  • Preheat oven to 200C or 180C fan forced.
  • Lightly grease a 6-cup capacity baking dish.
  • Combine breadcrumbs and herbs.
  • Toss chicken in flour, shaking off any excess.
  • Dip in egg and breadcrumbs, pressing to coat.
  • Heat oil in large frying pan on medium heat, cook chicken in batches for 1-2 minutes each side, till browned all over.
  • Pour 3/4 cup pasta sauce into the base of prepared dish.
  • Top with half the chicken 1 cup of pasta sauce and half the parmesan, then remaining chicken, pasta sauce and parmesan.
  • scatter black olives if using, and mozarella.
  • Season and bake for 30mins until cheese is bubbling and golden.
  • Serve with salad.
