Flank Steak with Teriyaki Marinade

  • Make ¼ inch slits in one side of the steak with a sharp paring knife; fill slits with garlic and put steak in a shallow dish large enough to hold it.
  • Whisk together remaining ingredients until emulsified.
  • Pour over steak, turning steak to coat well, let marinate, covered, turning occasionally, for 1 hour at room temperature and up to 10 hours, chilled.
  • Let steak come to room temperature and discard garlic.
  • Broil 4 inches from heat, turning once, 10-12 minutes for medium-rare meat and reserve pan juices.
  • Alternatively, remove steak from marinade and grill over hot coals, brushing occasionally with marinade for the same amount of time as the broiler.
  • Transfer to a platter and let stand 10 minutes.
  • Slice thin across the grain and serve with reserved pan juices.

  1. This was just ok-- needs more flavor. Next time I'm cooking the whole thing on the grill. I'll use less oil and more soy sauce. I'll add ginger and orange juice or some grated orange rind.
     
  2. This is a great recipe! My young children enjoyed it! I used minced garlic instead of cloves. The best part for me was eating the left overs the next day! The flavor was just as good! Will definitely make again!
     
  3. This is so easy to throw together, but really adds a good flavor to the steak. I doubled the soy sauce by accident (the cap came off of the bottle), but it was low sodium- so I do not think it did any harm. Thanks for sharing such an easy marinade :)
     
  4. This is yummy! I followed the recipe as stated, except that I did not discard the garlic after marinating. We loved the crunchy 'bites' of the grilled garlic. Good recipe. Thanks.
     
  5. Excellent! Although the recipe states to marinade at least 1 hour and up to 10 hours, mine marinaded a whopping 33 hours! I had planned this for our Sunday meal but, ya know how things go with kids....our plans changed and we ended up having it for Monday night dinner. Didn't matter, it was delicious. I didn't cut the slits and stick in the garlic....I scored the flank steak, cut the garlic into small chunks, marinaded as stated and then rubbed the garlic chunks into the scored parts and broiled in my oven. Thanks Ev, this was fabulous :)

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
