Five Points Home Fries

ingredients
- 3 russet potatoes, cut in 1/2-inch dice
- 1⁄3 cup extra virgin olive oil
- 1 small onion, diced
- salt
- black pepper
- 1 tablespoon garlic, minced
- 1 tablespoon paprika
directions
- Bring a large pot of salted water to boil over high heat.
- Add the potatoes.
- Return to the boil.
- Cook until just tender, about 7 minutes.
- Drain well in a colander and allow to cool.
- Heat the olive oil in a 10" skillet over medium heat.
- Add the onion.
- Cook, stirring, until golden, about 10 minutes.
- Season with salt and pepper.
- Add the garlic and paprika.
- Cook, stirring, 4 minutes.
- Raise the heat to high.
- Add the potatoes.
- Cook, stirring constantly and adding more oil if needed, until the potatoes have crisped and browned to desired doneness, about 5 minutes.
- Season with salt and pepper.

<p>I live with my husband, four cats, and a sweet mutt named Jada in Scarborough, Ontario, where I work as an elementary school administrative assistant.
