A very simple recipe and yet...what a delicious meal! The ingredients blend into a tasty chicken meal that is so easy to put together. It goes well with Basmati rice. This recipe was found on Chow.com, posted by Val.

Directions

  1. Preheat oven to 425 degrees F. Combine the mustard and water. Set aside.
  2. Line a 8" x 8" baking dish with foil.
  3. In a small sauce pan over medium heat, mix together the mustard mixture, maple syrup, sage and curry powder. Heat and stir until sage and curry are well blended.
  4. Sprinkle chicken pieces with salt an ground pepper. Place in foil lines dish. Pour sauce over chicken pieces and turn to coat; snuggle the foil around the chicken so that the chicken pieces are a bit crowded together. I find that 6 thigh fit well in the 8" x 8" dish.
  5. Bake uncovered, and basting every 10-15 minutes for about 40 minutes or til golden brown. The basting is very important to achieve the proper flavor.
