- 1⁄4 cup Dijon mustard
- 3 tablespoons water
- 2⁄3 cup maple syrup
- 2 teaspoons rubbed sage or 2 teaspoons ground sage
- 2 teaspoons curry powder
- 6 -8 chicken thighs or 6 -8 chicken drumsticks, skin removed
- salt & freshly ground black pepper, to taste

- Preheat oven to 425 degrees F. Combine the mustard and water. Set aside.
- Line a 8" x 8" baking dish with foil.
- In a small sauce pan over medium heat, mix together the mustard mixture, maple syrup, sage and curry powder. Heat and stir until sage and curry are well blended.
- Sprinkle chicken pieces with salt an ground pepper. Place in foil lines dish. Pour sauce over chicken pieces and turn to coat; snuggle the foil around the chicken so that the chicken pieces are a bit crowded together. I find that 6 thigh fit well in the 8" x 8" dish.
- Bake uncovered, and basting every 10-15 minutes for about 40 minutes or til golden brown. The basting is very important to achieve the proper flavor.
