- 1 1 kg cod or 1 kg tilapia fillet, cut into small pieces
- 14.79 ml vegetable oil
- 236.59 ml onion, thinly sliced
- 1 garlic clove, minced
- 177.44 ml celery, thinly sliced diagonally
- 118.29 ml green pepper, diced
- 157.80 ml carrot, sliced
- 340.19 g can tomatoes, diced
- 473.18 ml potatoes, cubed
- 236.59 ml dry white wine
- 236.59 ml water
- 236.59 ml tomato juice
- 14.79 ml lemon juice
- 4.92 ml dried orange peel
- 4.92 ml basil
- 4.92 ml salt
- 0.61 ml fennel seed
- 1.23 ml crushed red pepper flakes
directions
- In a 4-quart heavy cooking pot, saute onion, garlic, celery, pepper and carrots in oil.
- Add tomatoes, potatoes, wine, water, tomato juice, lemon juice and all seasonings.
- Cover and simmer slowly for 30 minutes, or until potatoes are tender.
- Add fish. Gently cook stew uncovered for about 12 minutes or until fish flakes. Do not overcook. Fish pieces must remain intact.
